Osso Buco is a dish that comes under the Lombard Cuisine where the vegetables are finely chopped and then prepared with white wine as well as broth. First, to prepare the dish Osso Buco, you need to chop two medium carrots, one medium onion, and two celeries. You need to chop all of them in equal sizes which will help you in cooking.
How to prepare the dish?
First, you need to make Osso Buco and flour and herbs that you want to put, etc. Mix flour, herbs, and salt together. Then you need to put the ingredients that you have mixed above the six veal shanks. Turn these shanks and then put the ingredients on both sides of the veal shanks to make Osso Buco. You need to tie the veal shanks so that they get cooked properly with the help of the thread. Once you have dusted and tied them, now it’s time to turn on the gas stove.
Then you need to pour some grape seed oil and turn on the gas and keep it between medium to high heat and place the veal shanks over the pan and cook it for 3 to 5 minutes each of the sides. Then you will notice that a lovely color has started appearing over the veal shanks. You need to make sure that the shanks are not overcrowded and make sure you take a larger pan and fry it properly.
Frying the shanks
When you are frying meat then due to overcrowding then you might see that steam is building between the meats. This will prevent the lovely brown crust like a thing from forming. You might see that there is some brown stuff that is present when you have fried the meat. This will also give an extra flavor when you will fry the vegetables that you have chopped earlier. Then you need to sauté the vegetables and wait for five minutes.
Add the herbs
You need to add one-two spoon of tomato paste, 6 pieces of garlic. You need to sauté it for a minute. You need to put two cups of white wine in the pan. If you want to have a darker color, then you can also you red wine instead of white wine. Then you need to sauté it properly for a few minutes and it’s time to add the flavor to Osso Buco. So, for that, you need to add rosemary and thyme and a cup of high-quality beef stock, and 2 dry bay leaves, broth, salt, etc.
Time to add the tomatoes
One main ingredient to make Osso Buco is to add the tomatoes. Crush the tomatoes and then add it in the pan. And then you need to wait till it starts boiling and then adds the veal shanks that you have kept aside after frying. Place it properly so that it does not break. Make sure you are stirring it with the help of a wooden spoon. Bring it to boiling. Then make sure you keep it in the oven so that it gets cooked properly at 25 to 30 degrees Fahrenheit for 3 to 4 hours.
Preparing the stock
First you need to chop the onion finely. The taste of the dish depends on how well you are doing the technique. Then take four cups of high-quality chicken broth and keep the gas at a simmer flame and a pinch of saffron to it. Then close the pan. Now just check the Osso Buco once and after 15 minutes, the process of Risotto making will start.
Process of making Risotto
For that you need to take 3 tablespoons of butter, and then turn on the flame and keep it between medium to high flame. You need to add the finely chopped onion to it. And then sauté it for just two minutes until it turns translucent. And then you can add a special kind of rice which is Arborio rice. You need to have this special kind of rice since you are preparing Risotto. This kind of rice is best for preparing Risotto. Then you need to sauté it for say 3 to 4 minutes. You will see that the color of the rice has turned translucent.
Time to add wine
Now it’s time to add one cup of white wine. Then you need to cook it for 5 to 6 minutes. After that, you need to add the stock that you were preparing which has now turned into a nice color that is saffron. Then you need to mix it properly and take the spoon and stir it around the pan. Then again add the stock and repeat the process. You need to do this till the rice gets properly cooked. This will look like creamy material and it will not get stuck in between your teeth as well. Add cheese to it. And also add two tablespoons of unsalted butter. The Risotto should look like a creamy dish. And it will feel great to eat with Osso Buco.
Take out the Osso Buco
Before 15 minutes when the rice was getting prepared, take the Osso Buco out from the oven. And then it was kept aside so that it can get cooled. By this time you can also get ready to serve your guests who have come to your place to have dinner. If you have cooked the Osso Buco properly, then you will see that you are able to pierce using a knife.
Now it’s time to take the Osso Buco out of the pan. Then scoop out the soft interior material and chop it finely and then add it to the Risotto. This will make the Risotto tastier. Chop some parsley and lemon zest and grated garlic. Then start with the plating. Add the risotto first and then place the Osso Buco and then parsley, lemon zest and grated garlic that you have mixed and kept. Take out the thread from the Osso Buco. And serve this with a glass of red wine to your guests.
